Steep & Sip 101

There are several ways to make our teas, and you can always customize your methods to your own taste. But to get you started, here are the basic ways to make our teas.

Keep in mind, cleaner water will create richer tasting teas. Try to use filtered water when possible.

Loose Teas

Traditional Hot Tea

  • Bring 1 cup (8 Oz) of cold water to a rolling boil for every serving of tea in a kettle. 
  • Once boiling, place 1 slightly heaping teaspoon of tea (~2 grams) for each serving you would like to make. That is, there should be 1 teaspoon of tea for every cup of water in your kettle.
  • Let the tea brew for 4 to 8 minutes depending on how rich you like your tea. The longer you let the tea brew, the stronger the taste.
  • Pour into a cup with a handle, wait 3 to 4 minutes for the tea to cool, add sugar to your taste, and enjoy.

Iced Tea

  • Bring half a cup (4 Oz) of cold water to a rolling boil for each serving of tea in a kettle. 
  • Once boiling, place 1 slightly heaping teaspoon of tea in for each serving you want to make. 
  • Let the tea brew for 8 to 12 minutes (10 minutes is recommended.) 
  • Remove the kettle from the stovetop and let sit for 2 minutes, then add cold water. At the same time, add sugar to your taste and mix until the sugar is dissolved.
  • Refrigerate for 50 minutes or until cold. Serve with ice and enjoy.

Tea Latte

Hot

  • Make the tea. Forst boil the water and seep the tea bag or loose tea.
  • To get the best froth, use fresh milk.
  • Heat fresh milk to 150 degrees (scalding). It’s important to heat the milk to just scalding, but not boiling. It’s easiest to measure temperature with a food thermometer, but you can also measure with your finger: it’s ready when it’s hot to the touch and tiny bubbles are starting to form at the edges.
  • Use a French press or vigorously whisk the milk. For the French press, pump for 20 seconds until small, even bubbles form.
  • Pour the tea and milk into the cup. Enjoy!

Iced 

  • Make the tea concentrate (30 minutes): Steep the tea bag or loose tea for 30 minurtes.
  • Strain: Strain the concentrate into a jar.  So you can refrigerate until you’re ready to drink!
  • Add ice and milk: To serve, add the concentrate to a glass with ice. Pour in the milk and serve!

Cold Brewed Iced Tea

  • Pour 1 cup of water for each serving of tea into a pitcher. 
  • Put 1 slightly heaping teaspoon of tea in for each serving you want to make.
  • Cover the pitcher and place in the fridge. For white or green tea, place in the fridge for 7 hours. For black or oolong tea, place in the fridge for 10 hours. 
  • Once done, pour the tea into another pitcher, filtering it through a mesh strainer or a cheesecloth. 
  • Mix in sugar to your liking, pour and enjoy. 

Matcha / Milled Tea

Hot

  • For each serving, take 1 teaspoon of matcha powder and place it in a bowl. Try to break any clumps in the matcha powder (if you have a sift, use it when pouring the powder into the bowl. If not, you will still be OK.)
  • Boil a couple of cups of water on your stove.
  • Take 1/4 cup of water and let it sit in a separate cup until it cools to about 180ºF .
  • Pour it in with the matcha and whisk until well mixed in.
  • Meanwhile, take about one third of a cup of boiling water and let it cool to about 180ºF.  You may also use milk for this next part, but you need to boil it and wait for it to cool a bit as well.
  • Take your one third of a cup water/milk, pour it in with the matcha, add sugar to your taste, and whisk in a zig-zag motion until it begins to make bubbles. Then whisk the surface of the matcha until it has a layer of foam. 
  • Finally, run your whisking tool in one circle around the cup, and pick it up from the middle of the cup. Enjoy immediately.

Cold Brewed, Iced

  • Start with a glass filled with ice.
  • Pour 3/4 cup cold water. If you have filtered water, that would be best to really bring out the matcha flavor.
  • Into a cocktail shaker add cold water followed by a teaspoon of matcha.
  • Shake vigorously for about 10-20 seconds. Pour matcha into the ice water glass and stir well before drinking.

Matcha/ Milled Tea Latte

Hot

  • Heat water to a low simmer.
  • Sift 1 teaspoon of milled tea/matcha into a shallow bowl. 
  • Pour 3 table spoons if simmering water over the matcha, then move your matcha whisk back and forth in a zigzag pattern to combine the powder with the water.
  • The mixture should be slightly bubbly and foamy.
  • Heat 1 cup (8 Oz) of milk to simmer.
  • Stir in 1-2 teaspoons of sweetner of your choice.
  • Froth the milk until double in size.
  • Pour into a mug, then pour the matcha on top gently stirring the mixture together. Enjoy.

Iced

  • Sift 1 teaspoon matcha into a shallow bowl. 
  • Add ¼ cup warm water. 
  • Move your matcha whisk back and forth in a zigzag pattern to combine the powder with the water.
  • Sweeten 1 cup cold milk with the sweetener of your choice.
  • Fill a tall glass with ice. Add sweetened milk.
  • Pour the matcha mixture over top, then use a straw to stir together.
